Triple Cheese Manicotti Recipe
- 1 1/2 c. water
- 1 (8 ounce.) can tomato sauce
- 1 pkg. spaghetti sauce mix
- 2 c. shredded Mozzarella cheese, divided
- 1 c. Ricotta cheese
- 1/2 c. grated Parmesan cheese
- 2 Large eggs, beaten
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 8 manicotti shells, cooked & liquid removed
- Combine water, tomato sauce and spaghetti sauce fold in a small saucepan.
- Simmer, uncovered 10 min.
- Mix 1 c. Mozzarella, Ricotta, Parmesan, Large eggs, salt and pepper.
- Stuff cheese mix into cooked shells using about 1/4 c. for each shell.
- Pour 1/2 c. sauce into shallow 2 qt casserole; arrange manicotti shells in sauce and pour remaining sauce over top.
- Sprinkle with remaining Mozzarella cheese.
- Bake, uncovered at 350 degrees for 25 to 30 min or possibly till bubbly.
- Yield: 4 servings.
