Koya Tofu with Egg
- 20 grams Koya tofu
- 2 Dried shiitake mushrooms (optional)
- 1 Egg
- 1 tbsp of each Soy sauce, mirin, sake
- 100 ml Water, dashi stock granules (1 teaspoon)
- Reconstitute the koya tofu and cut into bite-sized pieces.
- Reconstitute the shiitake mushrooms by soaking in water.
- Combine the ingredients.
- Combine the tofu and shiitake with the combined sauce and let it boil a short time (about 10 minutes).
- At this point, taste it and adjust the seasoning accordingly!
- When the flavors have soaked into the tofu and it has softened, pour in the beaten egg.
- Cover with a lid and once the egg has cooked, it's done!
