Koya Tofu with Egg

  1. Reconstitute the koya tofu and cut into bite-sized pieces.
  2. Reconstitute the shiitake mushrooms by soaking in water.
  3. Combine the ingredients.
  4. Combine the tofu and shiitake with the combined sauce and let it boil a short time (about 10 minutes).
  5. At this point, taste it and adjust the seasoning accordingly!
  6. When the flavors have soaked into the tofu and it has softened, pour in the beaten egg.
  7. Cover with a lid and once the egg has cooked, it's done!
