Creamed Onions & Peas Recipe
- 2 lbs. pearl onions, about same size
- 2 tbsp. butter
- 2 tbsp. all-purpose flour
- Salt & pepper to taste
- Healthy pinch of nutmeg
- 1 c. lowfat milk
- 1 c. green peas, fresh or possibly frzn
- Peel onions and cut a small cross at root end of each.
- Place onions in a 3 qt saucepan, cover with water and cook till tender.
- Drain well.
- In medium saucepan heat butter.
- Stir in flour and cook for 1 minute over low heat.
- Season with salt, pepper and nutmeg to taste.
- Gradually stir in lowfat milk and cook over medium heat till thickened.
- Add in onions and peas and simmer 5 min.
- Makes 8 servings.
