Taco Mashed Potatoes
- 1 pound Ground Beef Or Turkey
- 1 whole Small Onion, Chopped
- 1 whole Envelope, Taco Seasoning Mix
- 1 cup Shredded Colby/jack Cheese, Shredded
- 24 ounces, weight Mashed Potatoes, Homemade Or Store Bought
- 1 whole Egg
- Preheat oven to 375 degrees F. Grease an 8-9 baking dish.
- In a bowl, mix together potatoes, egg and 1/2 cup of cheese.
- Set aside.
- In a large skillet, brown ground beef with chopped onion until no longer pink.
- Drain if necessary.
- Return to pan and stir in taco seasoning.
- Spoon meat on to bottom of baking dish.
- Spread potato mixture on top of taco meat.
- Sprinkle remaining 1/2 cup of cheese on top.
- Bake for 30 minutes or until heated through.
