Fish Creole
- 1 stick Butter
- 1 whole Medium Onion
- 2 stalks Celery
- 1 whole Medium Green Bell Pepper
- 1 Tablespoon Cajun Seasonings
- 1- 1/2 pound Mild, White Fish
- 1 can (large) Diced Tomatoes, Or Whole Tomatoes Cut Into Chuncks
- Place stick of butter in baking dish.
- Place in oven and preheat oven to 350 degrees.
- While the oven in preheating, finely chop the onion, celery, and bell pepper.
- As soon as the even has reached 350 degrees, remove the dish.
- The butter should be completely melted.
- Sprinkle the Cajun seasonings on top of the butter.
- Place the fish in the dish in an even layer.
- Once all the fish have been place in the dish, flip them over so the top layer is coated with the butter and seasonings.
- Spread the chopped veggies over the top.
- Pour the tomatoes over the veggies in an even layer.
- Cover with foil and place back in the oven.
- Bake for 1 1/2 hours.
- Serve over rice.
