Easy Mini Cheesecakes Recipe

• 3 (8 ounce.) Packages cream cheese
• 1 c. lowfat sour cream
• 1 c. sugar
• 3 Large eggs
• 1 tbsp. lemon juice
• 2 teaspoon vanilla
• 1 box vanilla wafers
• 1 can cherry pie filling

1. Beat all ingredients, except vanilla wafers and cherry topping, till fluffy.
2. Drop 1 vanilla wafer into paper baking c. that is placed in a cupcake pan.
3. Top wafer with cream cheese filling till 3/4 filled.
4. Repeat process till all filling is used.
5. Bake at 350 degrees for 15 min.
6. Top with prepared pie filling.
