Shitake Mushroom Asian Chicken Soup
- 2 liters chicken stock
- 1 chicken breast fillet
- 250 g shitake mushrooms, sliced
- 2 kaffir lime leaves, lightly torn
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 140 g vermicelli, rehydrated
- Whack everything in a pot and simmer until chicken breast is cooked (approx 15 minutes).
- Remove chicken breast and shred, return tp the pot with the vermicelli and reheat.
- You could also use 40g of dehydrated shitake mushrooms.
