Poikes Pork Chop Dinner Recipe
- 6 Poikes pork chops
- 2 tbsp. oil
- Salt and pepper
- 2 tbsp. butter
- 3 tbsp. flour
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 c. chicken broth
- 6 c. sliced potatoes
- 1 med. onion, sliced and separated into rings
- Brown pork chops on both sides in warm oil in 12-inch skillet.
- Sprinkle with salt and pepper to taste.
- Meanwhile, heat butter in saucepan.
- Stir in flour, 1 1/2 tsp.
- salt and 1/4 tsp.
- pepper.
- Add in chicken broth, cook, stirring constantly, till mix comes to a boil.
- Place potatoes in bottom of a 9x13 inch baking dish.
- Top with onion rings.
- Pour chicken broth mix proportionately over top.
- Top with pork chops.
- Cover with foil.
- Bake in 350 degree oven for 1 hour.
- Remove cover and continue baking 30 min or possibly till meat is tender.
- 6 servings.
- This is a hearty, country dinner.
- Serve this dish with fresh broccoli or possibly green beans.
