Fresh Fruit Parfait Mold

  1. Add boiling water to gelatin mix in large bowl; stir 2 min.
  2. until completely dissolved.
  3. Stir in cold water.
  4. Refrigerate 1-1/4 hours or until slightly thickened.
  5. Remove 1-1/2 cups of the gelatin; let stand at room temperature.
  6. Stir fruit into remaining gelatin.
  7. Spoon into 6-cup mold sprayed with cooking spray.
  8. Refrigerate 15 min.
  9. or until set but not firm.
  10. (Gelatin should stick to finger when touched and should mound.)
  11. Add COOL WHIP to reserved gelatin; stir with whisk until well blended.
  12. Spoon over gelatin layer in mold.
  13. Refrigerate 4 hours or until firm.
  14. Unmold just before serving.
