Pumpkin & Fig Granola

  1. Preheat oven to 350 F.
  2. In a bowl, combine oats, flour, puffed cereal, almonds, peanuts, pumpkin pie spice and cinnamon, and stir to combine.
  3. In a separate bowl combine pumpkin puree, honey and sugar.
  4. Add the pumpkin mix into the oat mixture and stir with a spoon to break it up and create a dough, mixing it in as much as you can for at least 5 minutes.
  5. Mix in more pumpkin if dough is too dry.
  6. Fold in fig pieces.
  7. Spray a 9 x 13 inch baking dish with non-stick spray and press the dough into the pan.
  8. Bake for 20-25 minutes or until the top is golden brown.
  9. Remove it from the oven and let it cool thoroughly.
  10. Then store it in an airtight container.
  11. I kept mine in the fridge, this way it will keep longer.
  12. Enjoy.
