Potato And Cheese Stuffed GreenPeppers Recipe

  1. Preheat oven to 350 degrees.
  2. Cut a slice from the stem end of each pepper, remove seeds.
  3. Place peppers in saucepan with boiling water to cover and 1 tsp.
  4. of salt.
  5. Cover and bring to a boil.
  6. Boil for 5 min.
  7. Remove peppers from water, invert on tray to drain well.
  8. Saute onion and garlic in 2 Tbsp.
  9. bacon drippings for 3 to 4 min.
  10. Add in potatoes, cheese, celery, bacon and remaining salt; mix well.
  11. Spoon into peppers and combine crumbs and remaining bacon drippings.
  12. Sprinkle over peppers.
  13. Arrange in a close fitting, covered casserole.
  14. Bake for 30 min.
  15. Remove; cover and bake for 10 min longer or until crumbs are brown.
