Eggplant with Pork - Easily Made in the Microwave
- 3 Eggplants (slim Japanese type)
- 3 slice Thinly sliced pork loin or roast
- 2 tbsp A. Oyster sauce
- 1 tbsp A. Vinegar
- 1 tbsp A. Soy sauce
- 1 clove A. Grated garlic
- 1 piece A. Grated ginger
- 1 tsp A. Sesame oil
- Take the stem ends off the eggplants and cut in half lengthwise.
- Cut a crisscross pattern over the skin side of each eggplant half.
- Soak in water to remove the bitterness.
- 3 minutes is fine!
- Combine the A. ingredients.
- Drain the eggplant slices.
- Make a slit from the thick bottom up to just below the stem (don't cut through).
- Cut the pork slices in half, and stuff into the the slit of each halved eggplant.
- Lay the eggplants in a heatproof dish, alternating the direction as shown.
- Give another mix to the combined A., and pour it over the eggplants.
- Cover loosely with plastic wrap, and microwave for 7 minutes at 600w.
- Done!
- Scatter finely chopped green onion to add color!
