Antartic Slush
- 14 cup blue curacao
- 14 cup sugar
- 2 tablespoons fresh lemon juice
- 4 cups crushed ice
- mint sprig, for garnish
- In a blender, mix liqueur, sugar, lemon juice and 1 cup ice.Blend until well mixed.
- With blender running, add the rest of the ice, 1/2 cup at a time, until it is all well incorporated.
- Transfer to a freezer container and freeze 4 hours or overnight.
- To serve, let stand 20 minutes at room tmemperature.
- Return to blender and blend until it has a smooth consistency.
- Serve into small goblets and serve immediately.
- Garnish with mint sprigs, if desired.
