Dilled Barley and Green Bean Salad

  1. Bring 3 cups water to a rapid simmer in a saucepan and stir in the barley.
  2. Cover and simmer gently until the water has been absorbed, about 35 minutes.
  3. Remove from the heat and set aside, uncovered, until room temperature.
  4. Meanwhile, if using fresh green beans, trim them and cut in half.
  5. Steam or microwave the fresh or frozen green beans until done to your liking.
  6. In either case, make sure the green beans are still bright and green, and rinse under cool water until they are cool.
  7. Combine the cooled barley and green beans with the remaining ingredients in a serving bowl and toss well.
  8. Serve at once or cover and refrigerate until needed.
