Rolled Oat Cookies
- 1 cup butter
- 1 cup packed brown sugar
- 14 cup water
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 14 cups flour
- 1 teaspoon salt
- 14 teaspoon baking soda
- In a mixing bowl, cream butter and sugar.
- Add the water and vanilla; mix well.
- Combine the dry ingreadients; add to creamed mixture and mix well.
- Chill for 30 minutes.
- Shape dough into two 1 1/2 inch rolls; wrap tightly in waxed paper.
- Chill for 2 hours or until firm.
- Cut into 1/2 inch slices and place 2 inches apart on greased baking sheets.
- Bake at 375 for 12 minutes or until lightly browned.
- Remove cookies to wire racks to cool.
