Braised Chicken with Onions and Tomatoes

  1. Heat oil in large saucepan over high heat.
  2. Add onions and saute 2 minutes.
  3. Stir in ginger, garlic and chiles.
  4. Add chicken pieces and brown lightly.
  5. Add tomatoes and remaining spices, yogurt, rum and salt.
  6. Reduce heat to low and braise 40 minutes until chicken is cooked through.
  7. Serve with cilantro and rice.
