Mandarin-Glazed Rack of Lamb
- 1 Tbsp. oil
- 2 racks of lamb (2.2 lb./1 kg), trimmed Safeway 1 lb For $5.99 thru 02/09
- 1/4 cup Kraft Mandarin Orange with Sesame Dressing
- 2 cloves garlic, minced
- 1 Tbsp. reduced-sodium soy sauce
- 1/2 tsp. freshly cracked black pepper
- zest of 1 orange Safeway 1 lb For $0.79 thru 02/09
- Heat oven to 450 degrees F.
- Heat oil in large ovenproof skillet on medium-high heat.
- Add meat, rib-sides up; cook 3 to 5 min.
- or until bottoms of racks are browned.
- Meanwhile, mix remaining ingredients.
- Turn meat over; brush with dressing mixture.
- Bake 25 min.
- or until meat is done (160 degrees F).
- Let stand 5 min.
- before cutting between ribs to serve.
