Dijon Thyme Broccoli With Pine Nuts
- 5 cups raw broccoli florets
- 1 tablespoon minced shallot
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 teaspoons chopped fresh thyme
- 2 tablespoons toasted pine nuts
- Arrange broccoli in a steamer, steam covered for 4 minutes or until crisp-tender.
- Place broccoli in a large bowl.
- Combine shallots, olive oil, lemon juice, dijon mustard, and fresh thyme in a bowl, and stir with a whisk.
- Add broccoli, and pinenuts to the oil mixture, and toss.
