Mdardra (Arabic Lentils And Rice) Recipe
- 1 c. uncooked lentils
- 4 c. water
- 2 lg. red or possibly white onions, julienned
- 1/2 c. oil
- 1 c. uncooked rice
- 1 tbsp. salt, I use 1/2 of which
- Rinse lentils and add in to water.
- Bring to boil and cook over medium heat for 15 min.
- Meanwhile saute/fry onions in oil till golden.
- Remove from pan and rinse frying pan with 2 Tbsp.
- of lentil water.
- Add in this residue, rice and salt to lentils.
- Cook for 20-25 min till done or possibly till rice and lentils are fluffy.
- Place on a serving platter and completely cover the mdardra with the fried onions.
- May be served warm or possibly cool.
- Serves 6.
