Mdardra (Arabic Lentils And Rice) Recipe

  1. Rinse lentils and add in to water.
  2. Bring to boil and cook over medium heat for 15 min.
  3. Meanwhile saute/fry onions in oil till golden.
  4. Remove from pan and rinse frying pan with 2 Tbsp.
  5. of lentil water.
  6. Add in this residue, rice and salt to lentils.
  7. Cook for 20-25 min till done or possibly till rice and lentils are fluffy.
  8. Place on a serving platter and completely cover the mdardra with the fried onions.
  9. May be served warm or possibly cool.
  10. Serves 6.
