Caramel Meringue Bars Recipe

  1. Heat oven to 350 degrees.
  2. Grease a 12-3/4 by 9 by 2-inch pan with unsalted shortening and dust lightly with flour.
  3. Sift together flour, baking pwdr, baking soda and salt.
  4. Work butter in a bowl till creamy; add in granulated sugar and beat till blended.
  5. Add in egg yolks and vanilla; beat well.
  6. Fold in sifted dry ingredients.
  7. Pour batter into prepared pan.
  8. Sprinkle with chocolate pcs, coconut and nuts.
  9. In a bowl beat egg whites till stiff peaks form; gradually add in the 1 c. brown sugar and beat till stiff but not dry.
  10. Spread meringue on top of chocolate-nut mix.
  11. Bake 35-40 min.
  12. Cold in pan on wire cake rack and cut into 2x1-1/2 inch bars.
  13. Makes approximately 36 bars.
