Corn Dogs
- 1 cup milk
- 2 medium eggs
- 14 cup oil
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 13 cups cornmeal
- 23 cup flour
- 12 hot dogs
- flour, for dusting (1/2 cup)
- fat (for frying)
- popsicle sticks or skewer
- In a large bowl combine milk, eggs, oil, sugar and salt.
- Mix very well.
- Sprinkle in baking powder, cornmeal and flour.
- Stir to make slightly thick batter.
- Dry hot dogs on paper towels.
- Dust with flour, coating completely.
- Shove sticks in flour coated dogs.
- Set aside.
- Heat oil to 375*.
- Scoop batter into tall, narrow jar or cup.
- Fill about 3/4 full.
- Dip and swirl to coat evenly.
- Raise dog and let excess batter drip off.
- Place quickly into hot fat.
- Fry 1 or 2 at a time.
- "DON'T CROWD".
- Turn with tongs when bottom side is brown.
- Remove and drain.
