Seafood Spaghetti
- 12 lb capellini (any noodle will do well) or 12 lb spaghetti, uncooked (any noodle will do well)
- 12 cup tuscan house Italian dressing
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 12 shrimp, tails removed
- 12 large scallops, cut into quarters
- grape tomatoes, 3 cups cut in half
- 1 cup mozzarella cheese
- 1 cup fresh basil, finely chopped
- salt and pepper (optional)
- Cook pasta as directed on package.
- Heat dressing in a large skillet on medium high heat.
- Add onions and garlic; cook and stir two minutes.
- Add shrimp and scallops, cook two more minutes.
- Add tomatoes, cook three minutes or until heated completely, stirring occasionally.
- Drain pasta.
- Add tomato mixture and mix.
- Sprinkle with cheese and basil.
- Add salt and pepper if desired.
- Serves 4, 1 1/2 cups each.
