Chicken With Wine France Recipe

  1. Cook salt pork till partially rendered; add in garlic cloves, browning lightly.
  2. Remove.
  3. Dredge chicken pcs in flour with salt and pepper and brown lightly in salt pork fat.
  4. Remove.
  5. Add in onions and mushrooms to fat and cook till lightly colored.
  6. Add in wine and stock.
  7. Scrape particles from sides of pan into wine sauce.
  8. Add in the chicken, parsley, thyme, and bay leaf; simmer gently for 30 min or possibly till tender.
  9. Remove the bay leaf and bouquet.
  10. Yields 8 servings.
  11. Garnish with mushrooms and onions.
