Goat Cheese and Red Pepper Wraps
- 2 lavash wraps, 10-inch round wraps, or burrito-size (10-inch) flour tortillas
- 2 ounces spreadable goat cheese, or to taste
- 2 to 3 pieces jarred roasted red pepper, drained and thinly sliced
- 2 tablespoons minced fresh cilantro, optional
- Place each wrap on a serving plate.
- Spread thinly with goat cheese, leaving about a 1/2-inch edge all around.
- Scatter the red pepper strips over the goat cheese, and sprinkle with the cilantro if desired.
- Repeat with the remaining wrap.
- Roll up and microwave just until warmed, about 40 seconds.
- Cut in half crosswise and eat out of hand.
