Banana 'Cream' Pie Recipe
- 10 1/2 ounce packaged hard silken tofu
- 1/2 c. soymilk
- 1 1/2 c. Soy Butter (see separate recipe)
- 3 x ripe bananas
- 1 Tbsp. vanilla extract
- 1/2 c. honey Or possibly 3/4 c. brown sugar
- 1 x prepared 9-inch crumb pie crust Or possibly baked pastry pie crust, (see note)
- Makes 8 servings.
- VEGAN (HONEY)
- In food processor, blend tofu with soymilk.
- Add in Soy Butter, bananas, vanilla arid honey; process till smooth and creamy (if mix is too thick, add in more soymilk).
- Pour mix into pie crust and freeze till hard, at least 3 hrs.
- If you like, garnish with Mock Whipped Cream (see separate recipe) and banana slices.
- Makes 8 servings.
