  1. make a mound of flour put a crater in the middle add 3 eggs 1 tablespoon of olive oil and salt in middle
  2. work the flour into the eggs a little at a time forming a ball nead well from a ball with left over olive oil coat cover with plastic wrap
  3. let rest for 30 minutes to allow the gluten to rest
  4. cut ball in half reserve the other half covered so it won't dry out roll out till thin
  5. ad the filling every 2 inches roll the other half out.
  6. * in a bowl take remaining egg and 1 tablespoon of water beat together making eggwash coat the dough to make a glue so pasta will stick together, cover with dough get out all the air
  7. *and cut into squares or whatever shape you desire crimp edges push all the air out of ravioli get water boiling heavily on salt as you make the ravioli put on a pan coated with cornmeal so it won't stick let dry drop ravioli in boiling water dont over crowd cooks in about 4 minutes will float to the top add to marinara sauce
