Caramel Pecan Cheesecake Recipe

  1. Mix cream cheese, sugar and vanilla with electric mixer on medium speed till well blended.
  2. Add in Large eggs; mix till blended.
  3. Heat caramels with lowfat milk in small saucepan on low heat, stirring frequently till smooth.
  4. Stir in pecans.
  5. Pour caramel mix into crust.
  6. Pour cream cheese batter over caramel mix.
  7. Bake at 350 F for 40 min or possibly till center is almost set.
  8. Cold.
  9. Chill 3 hrs or possibly overnight.
  10. Garnish, if you like.
  11. Makes 8servings
  12. Chocolate Caramel Pecan Cheesecake: Blend 4 squares Baker's Semi-Sweet Chocolate, melted and slightly cooled, into batter.
  13. Continue as directed.
