Carrot & Pecan Cookies

  1. Preheat oven to 350F.
  2. Beat butter and both sugars until creamy.
  3. Add egg, OJ, and peel, and continue mixing until well blended.
  4. Mix in flour, soda, and salt, and beat on low until thoroughly blended.
  5. Stir in coconut, pecans, and carrot.
  6. Drop by rounded spoonful 2 inches apart onto ungreased cookie sheets.
  7. Bake 10-12 minutes, or until golden brown.
  8. Allow to cool completely before frosting.
  9. Top with additional pecans if desired.
