Coconut Cream Tarts

  1. Preheat the oven to 350 degrees.
  2. Spray 6 cups of a muffin tin.
  3. Whisk egg whites lightly and stir in coconut.
  4. Spread on the bottom and up the sides of the tin making a tart crust.
  5. Bake 13-18 minutes or until golden brown.
  6. Cool.
  7. Beat cream cheese with sour cream until smooth; add in cream of coconut.
  8. Divide into each cooled tart crust.
  9. Sprinkle tops with shredded coconut.
  10. Cover and refrigerate until serving.
