Scalloped Pinapple
- 1/2 cup sugar
- 1/2 cup butter soft
- 1/2 cup evaporated milk
- 4 cups bread cubes
- 3 eggs, separated
- 1 can (16) crushed pinapple juice with juice
- Mix sugar, butter, milk, and beaten egg yolks together.
- Stir in pinapple, mix well.
- Stir in bread cubes; mix until all bread is covered.
- Beat egg whites until stiff and they form peaks.
- Fold into pinapple mixture.
- Pour into a 2-1/2 quart baking dish greased with butter or you can use a spray.
- Bake at 375F for 45 minutes or until golden brown.
- You can serve warm or make ahead and serve cold.
