Roast Goose with Wild Rice Stuffing
- 14 pounds goose
- 2 cups water
- 1/2 cup wild rice
- 1 cup rice
- 1/2 cup onions diced
- 1 can mandarin oranges
- 1/2 cup pine nuts
- 1 cup chestnuts
- 1/2 cup celery diced
- 1/2 cube butter
- Stuff goose, salt and pepper skin, prick well, and tent with tin foil.
- Roast at 375F (190C) F for 4 hours.
- Remove tent and cook 30 minutes more.
- Cook rice until done.
- Saute celery and onion in butter.
- Mix all ingredients and stuff goose.
