Roast Goose with Wild Rice Stuffing

  1. Stuff goose, salt and pepper skin, prick well, and tent with tin foil.
  2. Roast at 375F (190C) F for 4 hours.
  3. Remove tent and cook 30 minutes more.
  4. Cook rice until done.
  5. Saute celery and onion in butter.
  6. Mix all ingredients and stuff goose.
