Date Pie
- 1 lb dates
- 1 cup milk
- 12 cup sugar
- 1 tablespoon flour
- 18 teaspoon salt
- 1 egg, well beaten
- 1 pastry shells, baked
- whipped cream, lightly sweetened (for garnish)
- Cut dates in quarters, remove pits.
- Just barely cover with water and simmer until tender.
- Drain off any excess water.
- Mix egg, milk, sugar, salt and flour together well; add to dates.
- Cook until thick, pour into baked shell and cool in refrigerator.
- When ready to serve, garnish with whipped cream.
