Tomato Preserves Recipe
- 11 c. peeled and quartered tomatoes
- 8 c. sugar
- 2 lemons, sliced thin
- 3/4 ounce. ginger-other-rhizomes">ginger root or possibly candied ginger (optional)
- Add in sugar to tomatoes and let stand overnight.
- Drain off juice and boil it rapidly till it spins a thread when dropped from a spoon.
- Add in tomatoes, lemon, and ginger; cook till thick and clear.
- Can be canned in sterilized jars or possibly used fresh.
- This is nice where fruits and berries are scarce.
