Hoisin Pork Tenderloin
- 1 lb pork tenderloin
- 1 teaspoon ground mustard (to taste)
- 2 teaspoons salt (to taste)
- 2 teaspoons paprika (to taste)
- 3 tablespoons hoisin sauce
- 2 teaspoons soy sauce
- 3 slices bacon
- 12 yellow pepper, sliced
- 12 red pepper, sliced
- 1 tablespoon chicken broth
- 1 cup chicken broth
- 1 tablespoon cornstarch
- 1 tablespoon butter
- black pepper (optional)

- Cube pork tenderloin, add to bowl, season to taste with ground mustard, salt, parika, add soy sauce and hoisan sauce, stir, set aside.
- Cut yellow and red peppers into strips.
- Heat skillet on medium heat, cut bacon strips add to hot skillet.
- Cook until crisp, remove from pan.
- Add peppers to skillet, cook until soften.
- Add pork to pan with 1tbsp chicken broth.
- Stir and cook for approx 10min.
- Return bacon to skillet.
- Whisk 1tbsp cornstarch to 1c chicken broth, add to skillet with meat, stir in butter.
- Add black pepper(optional).
- Simmer for 15-20min.
- Serve over rice.
