Where the Deer and the Antelope Play
- 1 lb ground deer meat
- 1 lb ground antelope steak
- 16 ounces tomato sauce
- 3 yellow squash
- 1 cup water
- 1 cup Minute Rice
- 1 teaspoon salt
- 14 cup olive oil
- Set oven at 350 degrees.
- Cut squash in half from top to bottom.
- Using a spoon scoop out the seeds and stringy part.
- On underside of squash cut a flat part so it will sit upright.
- Brush olive oil onto surface of squash and on a large baking sheet.
- Arrange squash onto baking sheet and bake for 10 minutes.
- Boil 1 cup of water in a large pot and add minute rice.
- Turn off heat and cover, let stand 10 minutes or until water is absorbed.
- Fluff with a fork.
- Brown ground deer and ground antelope in a large skillet.
- Add meat, tomato sauce and salt to rice that is done.
- Stir until mixed well.
- Remove squash from oven and spoon filling into squash.
- Bake until filling is browned and squash is tender.
- 10 minutes.
