Homemade Tomato Soup Recipe
- 6 med. fresh tomatoes
- 2 tbsp. butter
- 2 tbsp. vegetable oil
- 2 thinly sliced med. onions
- 1 (6 ounce.) tomato paste
- 2 teaspoon basil
- 1 teaspoon thyme
- 3 c. chicken stock
- 1 teaspoon salt
- Pepper
- Sugar
- Peel tomatoes and cut into quarters; set aside.
- Heat butter and oil till melted.
- Add in onions and cook till tender.
- Stir in tomatoes, paste, basil and thyme.
- Mash tomatoes slightly.
- Stir in broth and bring to a boil.
- Reduce heat, cover and simmer for 40 min.
- Press through a food mill.
- Strain and return to saucepan.
- Stir in salt and pepper.
- Sugar to taste.
