Healthy Bite-size Sweet Potato Bites

  1. Steam the sweet potatoes (you can also do this in a microwave) and mash whilst they are still hot.
  2. Peel the kabocha and remove the seeds.
  3. Cut into smaller pieces and microwave.
  4. Strain the kabocha squash and the sweet potatoes if you like.
  5. In a bowl, add the sweet potato, kabocha squash, sugar, skimmed milk and milk and blend together with a wooden spatula.
  6. Shape the mixture into bite-size pieces.
  7. Brush over a glaze made from 1 egg yolk and 1/2 tablespoon water and bake in an oven preheated to 200C for 15 minutes.
  8. When they have browned, they're done.
