Herb Rubbed Roaster
- 1 whole Roaster Chicken 3-4 Lbs
- 1/4 cups Olive Oil
- 2 Tablespoons Herbes De Provence
- 1 teaspoon Kosher Salt
- 1 teaspoon Crushed Red Pepper
- 3/4 teaspoons Black Pepper
- Properly clean chicken, be sure to remove giblets.
- Rinse thoroughly and pat chicken dry.
- Brush chicken with olive oil.
- In a small bowl, stir together herbs de Provence, salt, red pepper, and black pepper.
- Rub 2 tablespoons of herb mixture onto the bird, sprinkle remaining mixture on the inside of bird.
- Allow bird to sit for 1 hour to absorb flavors.
- Preheat oven to 375 degrees F. Place chicken breast side up on a rack in a shallow roasting pan.
- Roast chicken for 1 1/4 to 1 3/4 hours or until meat thermometer reads 165 degrees F.
- Note: A meat thermometer is your best friend when cooking meat.
- It assures the meat is cooked to the proper temperature.
