Herb Rubbed Roaster

  1. Properly clean chicken, be sure to remove giblets.
  2. Rinse thoroughly and pat chicken dry.
  3. Brush chicken with olive oil.
  4. In a small bowl, stir together herbs de Provence, salt, red pepper, and black pepper.
  5. Rub 2 tablespoons of herb mixture onto the bird, sprinkle remaining mixture on the inside of bird.
  6. Allow bird to sit for 1 hour to absorb flavors.
  7. Preheat oven to 375 degrees F. Place chicken breast side up on a rack in a shallow roasting pan.
  8. Roast chicken for 1 1/4 to 1 3/4 hours or until meat thermometer reads 165 degrees F.
  9. Note: A meat thermometer is your best friend when cooking meat.
  10. It assures the meat is cooked to the proper temperature.
