Curried Banana Chicken

  1. Preheat oven to 425F.
  2. Mix flour, salt and pepper on a dinner plate; set aside.
  3. Mix egg and milk in medium bowl with wire whisk or fork until blended; set aside.
  4. Mix crushed cereal, 1-1/2 tsp.
  5. of the curry powder and red pepper on a second dinner plate; set aside.
  6. Coat chicken with flour mixture; shake off excess.
  7. Dip chicken into egg mixture; allow excess to drip back into bowl.
  8. Finally, coat chicken with cereal mixture; pressing cereal mixture into chicken to completely cover.
  9. Place chicken on foil-covered baking sheet.
  10. Bake 18 min.
  11. or until chicken is cooked through.
  12. Meanwhile, toast almonds in medium skillet until golden brown.
  13. Add butter and sugar; stir to coat almonds.
  14. Place bananas in skillet with almonds; cook about 6 min.
  15. or until caramelized, stirring to coat evenly.
  16. Serve over baked chicken.
