Brad's roasted salsa verde
- 10 large tomatillos
- 4 serrano peppers
- 1/2 onion, cut in half
- 6 clove of garlic
- 2 tbsp olive oil
- 1/4 cup loose cilantro leaves
- 1 tsp sea salt
- 3/4 tsp cumin
- 3/4 tsp chili powder
- 1 juice of half a lime
- Husk and rinse tomatillos.
- Cut in half.
- Put in a lg baking dish.
- Add onion garlic and peppers with the tops cut off.
- Drizzle olive oil over all.
- Bake at 350, 35-40 min.
- Stir every 10min.
- Cook until tomatillos are soft and everything has a good char
- Remove from oven and let cool.
- When cool add all from baking dish including juices to a blender.
- Blend add cilantro and blend until smooth.
- Remove to a bowl.
- Add rest of ingredients and mix.
- Chill and serve.
