Brad's roasted salsa verde

  1. Husk and rinse tomatillos.
  2. Cut in half.
  3. Put in a lg baking dish.
  4. Add onion garlic and peppers with the tops cut off.
  5. Drizzle olive oil over all.
  6. Bake at 350, 35-40 min.
  7. Stir every 10min.
  8. Cook until tomatillos are soft and everything has a good char
  9. Remove from oven and let cool.
  10. When cool add all from baking dish including juices to a blender.
  11. Blend add cilantro and blend until smooth.
  12. Remove to a bowl.
  13. Add rest of ingredients and mix.
  14. Chill and serve.
