Mushroom Flatbread Pizza

  1. Preheat oven to 400 degrees F.
  2. In a 10-inch skillet, melt butter with olive oil over medium heat.
  3. Add mushrooms and saute them until browned, about 10 minutes.
  4. Season with salt and pepper and remove pan from heat.
  5. Lay out flatbreads.
  6. First, using a pastry or barbeque brush, coat them with the leftover butter and oil from the pan of mushrooms.
  7. There should be just enough to lightly coat the flatbreads.
  8. If not, drizzle 1 teaspoon of olive oil over the top of each flatbread.
  9. Top each flatbread with mozzarella cheese, mushrooms, a sprinkle of thyme, and green onions.
  10. Bake pizzas at 400 degrees F for 510 minutes, or until cheese is melted.
  11. Drizzle truffle oil over the top of the flatbread (about 1/2 teaspoon per pizza).
  12. Sprinkle Parmesan cheese over the top, slice, and serve.
