Vegetarian Football Pizzas

  1. Preheat oven to 400 F.
  2. Heat oil in a skillet over medium-high.
  3. Add the diced bell pepper and season with a little salt.
  4. Saute until crisp-tender, 2 minutes.
  5. Transfer to a bowl.
  6. Back in the skillet, add the spinach.
  7. Cook until spinach is wilted, 2 minutes.
  8. Transfer to a small strainer over the sink and press out any excess liquid.
  9. Roll out the pizza crust, and using a football cookie cutter, cut out...well, the football shapes.
  10. Place these mini crusts on a greased baking sheet.
  11. Spoon a small amount of pizza sauce over each football.
  12. Follow with a good layer of wilted spinach.
  13. Top with a good sprinkling of goat cheese and a layer of red pepper.
  14. Bake for 6 minutes and remove from oven.
