Alabama Cajun Boiled Peanuts

  1. Pour bag of peanuts into 5 quart pot
  2. Fill pot of peanuts with water leaving 2 inches at the rim
  3. Place cover of pot upside down over peanuts and soak overnight
  4. Pour the water out and rinse the peanuts a couple of times and fill the pot back up with water all but 2 inches
  5. Bring to a boil and reduce to a simmer
  6. Add only one half the bottle of liquid crab boil , only one handful of Tony Chacheres, two tsp.
  7. cayenne pepper, handful of crushed red pepper, 3 bay leaves and simmer for 3 hours, stirring every hour
  8. Add the other half bottle of liquid crab boil and the other handful of Tony Chacheres, simmer another 3 hours tasting one every so often to your liking
  9. You don't want them too mushy so after 6 hours they are done!
  10. Turn off the heat and let them cool in the pot to soak up more flavor....ENJOY !!
