Beer Battered Fish with Lemon Pepper Mayonnaise
- 2 new potatoes, cut into wedges Safeway 2 pkg For $5.00 thru 02/09
- 500 g orange sweet potato (kumera), peeled and cut into wedges
- olive oil spray
- salt and freshly ground black pepper, to taste
- 1/2 cup KRAFT Creamy Egg Mayonnaise with Omega 3
- Finely grated rind of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- 1/2 teaspoon cracked black peppercorns
- 4 pieces I&J Crispy Beer Battered Fish, cooked as per packet directions
- PLACE the potato wedges on a baking tray, spray with oil, season and bake in a hot oven 200oC for 30-45 minutes or until tender.
- COMBINE the mayonnaise, lemon and pepper.
- PLACE the fish on the serving plates and serve with a dollop of the Lemon Pepper Mayonnaise and wedges.
- Serve immediately.
