Pear Cakes
- 1 12 cups flour
- 34 teaspoon baking powder
- 1 12 teaspoons baking soda
- 14 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 34 cup sugar
- 1 teaspoon nutmeg, freshly grated if possible
- 12 teaspoon ground cinnamon
- 1 large egg
- 1 12 teaspoons vanilla extract
- 14 cup sour cream, plus
- 2 tablespoons sour cream
- 1 cup grated sweet pear
- 9 fresh pears, slices 1/4-inch thick
- Heat oven to 400F Lightly butter and flour nine 4-inch tart pans.
- Combine the first four ingredients in a medium bowl and set aside.
- Beat the butter and sugar, using a mixer on high speed, until light and fluffy.
- Add spices, egg, and vanilla; mix to combine.
- Reduce speed to low, add the flour mixture and sour cream.
- Stir in the pears.
- Pour 1/3 cup batter into each mold, top with a pear slice; bake for 20 minutes and cool.
- Serve and enjoy!
