Almond ring biscuits (Irmgards homemade)
- 113 grams unsalted butter
- 57 grams caster sugar
- 2 egg yolks
- 198 grams plain flour plus extra for rolling
- 28 grams ground almonds
- 1/2 tsp almond extract
- 1/2 tsp baking powder
- pinch salt
- Pre heat oven fan assisted to 162 gas mark 3 and line baking tray with greaseproof paper
- Cream the butter & sugar
- Beat in the egg yolks
- Add flour, ground almond, baking powder, salt & almond extract & give good mix then use blunt knife to make a dough, then use back of a spoon till it comes together.
- Knead dough until smooth, then using flour roll out to 1/4" thick
- Cut into desired shapes, be creative I used fluted round cookie cutter then a flower fondant cutter for the middle.
- I got 24.
- Put in oven, middle shelf fan assisted 162 for 20 minutes, until light brown & crisp.
- After a few minutes transfer to wire rack to cool.
- Enjoy.
