Almond ring biscuits (Irmgards homemade)

  1. Pre heat oven fan assisted to 162 gas mark 3 and line baking tray with greaseproof paper
  2. Cream the butter & sugar
  3. Beat in the egg yolks
  4. Add flour, ground almond, baking powder, salt & almond extract & give good mix then use blunt knife to make a dough, then use back of a spoon till it comes together.
  5. Knead dough until smooth, then using flour roll out to 1/4" thick
  6. Cut into desired shapes, be creative I used fluted round cookie cutter then a flower fondant cutter for the middle.
  7. I got 24.
  8. Put in oven, middle shelf fan assisted 162 for 20 minutes, until light brown & crisp.
  9. After a few minutes transfer to wire rack to cool.
  10. Enjoy.
