Braised Leeks and Green Beans
- 1/2 cup sherry
- 1 teaspoon olive oil
- 5 cups leeks well washed
- 1 cup mushrooms, wild sliced
- 2 cups green beans cut into, 1/3" lengths
- 1 teaspoon orange juice
- 1/2 teaspoon orange zest grated
- 1 tablespoon apple cider vinegar
- 1 x salt and black pepper to taste
- In a large skillet, heat sherry and oil over medium high heat.
- Add leeks and cook, stirring frequently, for 3 minutes.
- Add mushrooms and beans.
- Saute until the mushrooms begin to exude moisture, about 5 minutes.
- Stir in the remaining ingredients and remove from heat.
- Serve warm.
