Glazed Pecan Squash Rings
- 1 medium acorn squash (about 1 lb.)
- 1/4 cup orange juice
- 2 Tbsp. maple-flavored or pancake syrup
- 1/2 cup wheat bran flake cereal
- 1/2 cup PLANTERS Pecan Pieces
- 1/8 tsp. ground nutmeg
- Preheat oven to 400F.
- Trim and discard ends from squash, then cut squash crosswise into 1-inch-thick slices.
- Scoop out and discard seeds.
- Place squash rings in 13x9-inch baking dish.
- Mix together orange juice and syrup; spoon evenly over squash rings.
- Sprinkle with cereal, pecans and nutmeg; cover with foil.
- Bake 20 min.
- or until squash is tender.
- Uncover; continue baking 2 to 3 min.
- or until pecans are toasted.
