Dijon Scalloped Potatoes

  1. Heat oven to 350F.
  2. Melt 1 Tbsp.
  3. butter in large skillet on medium-high heat.
  4. Add onions; cook 5 to 7 min.
  5. or until tender, stirring frequently.
  6. Add cream cheese, broth and mustard; cook and stir 2 to 3 min.
  7. or until cream cheese is completely melted and mixture is well blended.
  8. Toss potatoes with cream cheese mixture; spoon into 13x9-inch baking dish sprayed with cooking spray.
  9. Melt remaining butter; mix with cracker crumbs, Parmesan and parsley.
  10. Sprinkle over potatoes.
  11. Bake 50 min.
  12. to 1 hour or until potatoes are tender.
