Mexiquiche
- 1 pie shell
- 2 cup shredded cheddar
- 5 eggs
- 1 lb ground turkey
- 3/4 cup salsa
- 4 tbsp taco seasoning
- 2 tbsp olive oil
- 1 1/2 cup evaporated milk or milk
- Preheat oven to 375
- Press your pie shell into a pre formed pan.
- Pie pan or quiche pan.
- I am using a quiche pan from Target.
- I love it because you can pop the whole quiche out of the pan.
- Cook ground turkey.
- Add 2 tbs taco seasoning and a dribble of oil.
- I use olive but veg oil is fine.
- Coat the bottom of your pie shell with the cooked meat
- Mix together eggs, salsa, 2 tbs taco seasoning milk and cheese in a bowl.
- Pour egg mixure over meat.
- Make sure it coats all the meat.
- If not, add another egg and a bit of milk til right.
- Put in the oven and cook 45 min.
- Poke the middle with a knife or toothpick.
- If it comes out clean, it's done.
- If not, put it in the oven and check every 3 to 5 min.
